8 oz medium shrimp peeled, cleaned and deveined
4 white flour tortillas
4 ounces mango salsa
8 ounces red beans and rice
For this recipe I saute'd my shrimp but you can also used boiled or grilled shrimp.
Add 2 tbs of olive oil to pan and heat to medium high. Rinse shrimp and pat dry using a paper towel, sprinkle with chilli powder and salt. Saute shrimp until opaque.
Wrap tortillas in a paper towel and heat in the microwave for 20 seconds.
Top with Shrimp, red beans and rice and mango-tomato-cucumber salsa
