Mango, Tomato & Cucumber Salsa

I Love, Love, Love this salsa! I can eat it straight out of the bowl.

I Love, Love, Love this salsa! I can eat it straight out of the bowl.

Ingredients:

1 cup mango (peeled)

1 cup tomatoes

1/2 cup cucumber (peeled)

1/4 cup red onion (peeled)

1/4 cup cilantro

2 garlic cloves (peeled)

1 tsp jalapeño

2 tbs lime juice

salt and pepper

Directions:

  1. Chop the mango, tomato and cucumber; add to a large bowl.
  2. Dice the red onion and cilantro; add to the bowl.
  3. Mince jalapeño and garlic; add to the bowl.
  4. Pour in lime juice and stir lightly until mixed well, adding salt and pepper to taste.
  5. Serve with tortilla or pita chips, or serve on crackers. This salsa is also good with chicken, shrimp or fish. I like to use it in my Shrimp Tacos (recipe coming soon).

15 minute Garlic Cheese Knots

Delicious 15 Minute Garlic Knots

Ingredients:

2 cans buttermilk biscuits

1/2 cup melted unsalted butter

1/4 cup olive oil

1/2 cup parmesan  cheese

3 tbs minced garlic

1 tsp sea salt

2 tbs fresh parsley

 1/4 tbs red pepper flakes

Directions:

  1. Heat oven to 400 degrees.
  2. Roll individual biscuits into a 5" ropes. Tie ropes into a knot, tucking ends under.
  3. Mix the remaining ingredients in a bowl. 
  4. Roll each knot in garlic cheese sauce to coat and place on a cookie sheet (not touching)
  5. Bake for 10 minutes, until golden brown.
  6. Pour remaining garlic cheese sauce over knots. Enjoy!
